Russian Origins and World Influences
Doukhobour cuisine is primarily of Russian origin, although it has been historically affected by various other Slavic ethnic influences thoroughout southern Russia. Since the last century, traditional Doukhobor cuisine has been uniquely vegetarian, reflecting heightened Doukhobor respect for the sanctity of both human and animal life. With the emigration of the Doukhobors to Canada, their cuisine has incorporated various western and world dishes, although many of these have also been creatively "vegetarianized" in an effort to maintain ancestral traditions.
